Japanese sushi chain Choushimaru has set a Guinness World Record for the largest simultaneous tuna filleting performance, held across 71 locations in and around Tokyo.
The event, conducted on November 1—Japan’s officially recognized “Sushi Day”—saw chefs at each outlet cut into bluefin tuna weighing around 40 kilograms, sourced from Nagasaki prefecture. Starting at 11:30 a.m. local time, all venues in Tokyo, Saitama, Chiba, and Kanagawa were connected via video conference, following the same performance format.
Choushimaru, known for its skilled sushi chefs across its Tokyo-area restaurants, revived its tuna-cutting show after a pandemic-related pause. Ken Ishii, company head, said the Guinness recognition was the result of coordinated efforts across departments, including procurement and hygiene management.
At a Tokyo restaurant open to the media, customers enjoyed freshly prepared tuna during the show. A visiting woman in her 70s remarked, “The medium-fatty tuna melted in my mouth and tasted great.”
In Japan, tuna is a sushi staple, and November 1 was designated “Sushi Day” decades ago to celebrate the season when ingredients—including fatty tuna and newly harvested rice—are at their peak freshness.
